# Forbici

> Forbici is a Neapolitan pizza restaurant group in the UK, serving
> biga-fermented dough that is slow-proved for a minimum of 24 hours and
> baked in a wood-fired oven. Recognised in the Top 100 Pizza in the World
> (The Best Pizza, Milan 2026). The name means "scissors" in Italian:
> pizzas are cut at the table with scissors, Roman style.

Forbici has three pizzerias: Manchester, Sheffield, and the Trafford
Centre. Guests can book a table, order takeaway for click and collect,
buy digital gift cards, and at participating venues order and pay at the
table by scanning a QR code.
